"Founded in 1868 and still family-run, Guittard is one of the oldest family-owned chocolate factories in the country; Etienne (“Eddy”) Guittard began by keeping miners supplied with coffee, tea, and chocolate, the original Sansome factory burned in the 1906 quake and the family rebuilt on Main before moving the factory to Burlingame in 1954, and today fourth and fifth generations run the company — Gary Guittard remembers roaming the old three-story brick factory as a child, especially the smells from roasting on the third floor — and the company has evolved by personally sourcing beans from Ecuador, Jamaica, and Madagascar and changing time, temperature, and other parameters to modify processing by bean." - Becky Duffett
