"The Finch American Grill, operated by Milkshake Concepts Hospitality Group, is opening its doors on March 22 in the historic Union Station Hotel. The menu, developed by senior culinary director Rodman Shields, offers a twist on American classics such as short rib with mac and cheese, salmon glazed with honey sriracha sauce, and a steak frites rendition. The restaurant features a refined interior design by Barnett Design Group, with Art Deco accents and marble-topped bars. Desserts include banana bread pudding, Key lime pie, and peanut butter cake. The bar offers classic cocktails with song titles as names, and a mini martini flight.
