Nashville’s Union Station Gets a Classy New Eatery in the Form of the Finch | Eater Nashville

"Tucked into the historic Union Station Hotel, I’m intrigued by the Finch American Grill’s arrival in Nashville — the third outpost of the Dallas-based concept operated by Milkshake Concepts Hospitality Group — which officially opens March 22 at 111 10th Avenue South. Housed in a space that once served as the terminal’s baggage building and Amtrak offices, the restaurant’s interiors have been refined into a breezy, relaxed setting with Art Deco accents, marble-topped bars, three massive arched mirrors reflecting the train yard, bird-feather wallpaper, gold-toned fixtures, and signature blue porcelain touches. Chef Rodman Shields’ menu riffs on American classics: short rib with a poblano-spiced mac and cheese, salmon glazed with honey sriracha, and a steak frites topped with a 17-ingredient sauce; starters include an applewood-smoked Idaho trout dip served with crispy potato waffles, Old Bay–dusted saltines, and grilled naan, plus meatballs spiked with Calabrian chiles, and a raw bar offering salmon crudo, oysters on the half shell, and a jumbo prawn cocktail. Desserts range from banana bread pudding soaked in house custard to Key lime pie topped with whipped cream and raspberry caviar and an Oreo-crumb peanut butter cake with peanut butter cream cheese topping. At the bar, classic cocktails are given musical nods — Moonlight in Vermont (a maple Old-Fashioned), Purple Rain (vodka with raspberries, lemon, and bubbles), and Visas in My Name (a Paper Plane) — and there’s a $17 mini martini flight with three tasting-size variations.
