"Okay, so you can’t get one dish at Sushi by Scratch, the Los Angeles import (with multiple locations) that opened here in September. What you can get is an interactive, unconventional omakase that swaps tradition for flavors and preparations the team likes. An example: Japanese freshwater eel seasoned with matcha and then fried tableside in bone marrow fat, finished with ponzu and homemade yuzu kosho. A favorite bite is a buttery escolar course with ikura and fresh wasabi. This is a fast-paced dinner that takes less than two hours for around 16 pieces of fish or beef.
