"At Austin-Bergstrom International Airport’s East Food Court across Gates 7 and 8, I found Peached Tortilla’s new Southern-Asian outpost, which brings the restaurant’s first-time breakfast tacos alongside its street-food favorites. Owner and chef Eric Silverstein says, “We made it a point to not dumb down the menu,” and the airport offerings reflect that: breakfast (served 4:30–10:30 a.m. daily) features tacos with fillings like brisket, eggs, crispy pork belly, and Japanese sweet potatoes, plus avocado toast and brisket hash; lunch (10:30 a.m. to the last scheduled flight) continues with other tacos — including a pad Thai version — bowls with rice, vegetables and a 45-minute egg, the JapaJam burger, bacon jam fries, and more. The location is part of the airport’s major dining revamp and will sell Silverstein’s forthcoming cookbook, Get Peached: Recipes and Stories From Peached Tortilla, expected in spring 2019; Silverstein originally opened Peached as a food truck in 2010, turned it into a brick-and-mortar on Burnet Road in 2014, opened event venue Peached Social House in 2016, and still operates the food truck around the city." - Nadia Chaudhury
