Henderson’s VeggiEAT Xpress Expands to Spring Valley - Eater Vegas

"Serving '100% vegan food' on Henderson's Stephanie Street since 2017, VeggiEAT Xpress has debuted a new brick-and-mortar expansion 18 miles to the west. The new home continues the Asian-fusion menu found in Henderson, a merging of popular Vietnamese- and Chinese-inspired dishes with a plant-based twist. Located between Fuddruckers and Mad Hatter Cupcakes, the counter service restaurant offers a large menu featuring vegan chicken nuggets, spring roll appetizers, vegan fish, tofu, grilled mushroom sandwiches, entrees of 'General Tsao Cauliflower' and 'sweet and sour vegan shrimp,' plus stir-fry noodles, fried rice, noodle soups, and sushi rolls.
