"The Banty Rooster brings a menu packed with the flavors of the Southwest, a rich cuisine that’s marked by green chiles, blue corn, squash, and lots of beans. Notable dishes include roasted delicata squash with pepitas, brown butter, and squash mole; sopapillas with honey and powdered sugar; and biscochitos with toasted corn ice cream. The menu includes a roasted pork collar with hatch chile and grilled short rib steak with ancho barbecue sauce. The drinks menu relies on ingredients and savory flavors from the kitchen. The 75-seat space is done up in whitewashed brick walls, pale oak tables, and blue banquettes throughout. Owner Delores Tronco-De Pierro is known for opening Work and Class in Denver, and for the Banty, she tapped her husband John De Pierro as executive chef." - Stefanie Tuder
