Right over in Lincoln Heights is a new startup called Aymara Peruvian Kitchen. Husband and wife team Caroline Beaurin and Ralph Walde opened Aymara less than a week ago, where traditional Peruvian dishes like lomo saltado, ceviche, and my personal favorite, arroz chaufa are available. The fried rice is never oily, full of flavor, and filling. Order Aymara’s ceviche as a side dish for a complete meal, and don’t forget an ice-cold Inca Kola.
