"Founded and run by Yolanda Antonopolou of Gaia Pulses, this peaceful whole-food café in Hackney Wick occupies an old Art Deco public baths and channels her grandmother’s recipes: think long-prepared fasolada and strict rules like using Aegean sea salt and adding extra-virgin olive oil at the end. The short, almost-vegan lunch menu is built around organic bean and lentil stews — try XXL ygantes with red peppers or green lentils and sprouted quinoa with garlic, dill and oregano — which can be finished with toppings such as barrel-aged feta, black olives or pickled vegetables.
