The space buzzes with conversation amid tin-can cutlery holders and corrugated iron, and the food ranges from Mughlai nawabi seekh kebabs with a hum and bristle of cumin and chilli to shahi laal maas with a deep crimson mathania-chilli sauce and inflated, ghee-rich naan.
