"A longtime vegan spot that began as a food truck in 2009 and later opened a brick-and-mortar on East Cesar Chavez in 2012, it serves Tex-Mex–inspired vegan comfort food—think nachos, queso, loaded burritos and bowls with options like chipotle lentils, blackened tempeh, or house-made barbecue seitan, plus a signature mac and cheeze. Owner Sue Davis has announced plans to return to a physical Austin location (an offer was accepted for a site in the 78723 zip code), describing the new space as having a mid-century diner ambiance, daily service with weekend brunch and late-night hours, and a roughly 16-month build-out timeline due to permitting and zoning; she is also seeking investors.
