"Opening today in the former T’s Pub space near Boston University, Gopchang Story brings a chain focused on gopchang — cattle or pig intestines — to 973 Commonwealth Avenue in Boston. The menu centers on offal showcased in various forms, such as in a soft tofu and clam stew, over fried rice, or marinated and grilled; the restaurant highlights the beauty of Korean offal by sprinkling charred, crispy grilled beef intestines, heart, and more with a unique blend of spices and a “magic powder” made of yam. The grilled dishes are the must-try, while the spicy beef intestine casserole is called “an absolute standout.” Founded in Seoul in 2004, the chain has numerous franchises across South Korea and several U.S. locations (New York, New Jersey, Virginia) with Los Angeles expansion planned. It opens July 20 with hours of 5 p.m.–1 a.m. Monday and Tuesday and 5 p.m.–2 a.m. Wednesday through Sunday; walk-ins only and watch for updates on social media.
