"In Old Montreal, I found Pincette serving lobster-shack staples year-round from a prime St-Paul Street space rather than a wooden waterfront structure. Run by the Antonopoulos Group with Executive Chef Khelil Ben Ammar, the menu showcases East Coast lobster (sourced from fisheries in Quebec, New Brunswick, and Prince Edward Island depending on the season) in rolls, poutines, club sandwiches, bisques, and mac and cheese—the first of which is priced at $28—with pricing set to minimize seasonal fluctuation. They’ll also serve other seafood such as shrimp cocktail, cod fritters, tuna tartare, and linguini with clams." - Valerie Silva
