Owner Jacquee Renna (La Quinta Cliffhouse, Pacifica Seafood) has entrusted executive chef Mike Moritz, a vet of foundational spots like Mille Fleurs and Mister A’s with its global dinner menu, which includes triple-cream brie baked in filo dough and served with lingonberry jam, seasonal fruits, and local sage flour honey, a roasted beet “filet” with vegan bordelaise sauce, and dry-aged duck breast in a cassis reduction with parsnip, broccolini, cippolini onion. And George’s at the Cove alum Aly Lyng does double duty as the executive pastry chef for both establishments, baking bread and pastries for Paradis while whipping up desserts at Communion like a vanilla bean Basque cheesecake with salted caramel and a warm flourless chocolate tart paired with espresso ice cream.
