"A wine bar in Nomad located in the basement of the Ace Hotel (20 W. 29th Street, at Broadway) features 85 to 100 small-producer wines and a range of charcuterie, cheeses, and tinned seafood served via trolley; it is run by EHV International, which also operates Koloman at the hotel, though the food will come from a different team. Max Weber oversees a wine list that he says will change often and hovers around $60 to $125 per bottle with plenty of by-the-glass options that start around $14; he brings experience from the Michelin-starred Vendome in Germany and the Jane in Antwerp. The interior, designed by Russell Sage Studios in the U.K., is inspired by Italian design in the disco era, with modular furniture and a half-dome disco ball overhead. Expect vinyl DJ sets, video art, and a listening counter where customers can listen to custom playlists from the Razor-N-Tape label.
