Falafel Salam Is Building a Georgetown Home for Its Food Truck - Eater Seattle
"Falafel Salam, known for its food truck operations and West Seattle restaurant, is creating a permanent home for one of its trucks in Georgetown. Owner Shimi Kahn has designed a custom food truck with 'a dream kitchen,' and he’s building a dining space around it. The new location will start serving customers next month, and it will likely eventually morph into a proper restaurant, similar to the fast-casual Falafel Salam location in West Seattle. It will serve the likes of falafel sandwiches with shwarma and lamb gyro, rice bowls, combination platters, dolmas, hummus, and garlic fries. Kahn is doing most of the construction himself. He’s planning to add a wall for local artists to display graffiti art and to become a spot on the Georgetown Art Attack Art Walk. He’ll also add a plant-filled indoor/outdoor greenhouse seating area, with passive sun heating in the winter and access to fresh air in the summer." - Megan Hill
