Owner Pablo Perez runs two rigs, one at McDowell and 27th, and this one, the busier of the two, on Indian School Road. Folding chairs cluster near the stand, and the griddle barely has time to cool before the next wave of orders. Perez roasts corn flour for house champurrado, a thick, cinnamon-dashed Mexican hot chocolate that’s alluring even with the summer heat.
