"Chi Chi’s Chicken and Beer is Freret Street’s coolest new hangout, a playful hub for Korean chicken wings, fried chicken sandwiches, onigirazu (sushi sandwiches), and kakigōri (Japanese shaved ice). For the wings, Garcia marinates the chicken for 24 hours in a blend of Korean rice wine, peanut oil, soy sauce, and a spice blend. They get an initial dredge of rice flour and all-purpose flour and a first fry, followed by a velveting technique with an ice-cold batter, then a second fry.
