"One of the first gourmet pizza restaurants in Downtown Las Vegas recently received a Brooklyn-influenced mural titled “The New Style” by Derek Douglas (SNIPT), inspired by a Beastie Boys track from Licensed to Ill, and added a renovated seating area as part of a rebranding. Chef Michael Vakneen, who will compete next month in the U.S. Caputo Cup national pizza competition with his new Old School Cheese, revamped the menu; the Old School Cheese pays tribute to New York brick-oven pies with shredded mozzarella and provolone, homemade plum tomato sauce, fresh Aiello mozzarella, Sicilian oregano, Genovese basil, and grated Italian Parmesan. Five other new pies include the Suprema (spicy Italian sausage, Ezzo pepperoni, hot capicola, roasted mushrooms, and red bell peppers); Mike’s Hot Pepperoni (onion-and-garlic cream sauce, freshly shredded cheese, Ezzo pepperoni, finished with a drizzle of Mike’s Hot Honey from Brooklyn); a creamy white pie of onion, spinach, and mushroom on a garlic-and-onion cream base; and a Detroit Special made with a 13-hour proofed dough that yields a crunchy, parmesan-like cheese crust and a soft, pillow-like interior, with toppings that vary daily.
