"Inspired by his desire to define a distinctly L.A. pizza style, Sohn developed Seven Tigers Pie Club using a Detroit-style base he refined with pizzaiolo Noel Brohner—including a special King Arthur flour blend and a 48-hour fermentation to achieve the desired rise and texture; dough is prepared daily and pizzas are currently topped with gochujang marinara, a classic four-cheese blend, and short rib glazed in a galbi sauce from Park’s BBQ, with plans to expand from three pizza types to seven, and the menu also includes pizza sandwiches stuffed with gochujang and bulgogi or with prosciutto, burrata, and tomatoes.
