"Rebecca Roland, associate editor, says her usual order is a burrito or caramelo but she’s "hard-pressed to leave without adding in a tripe taco." The pliant flour tortilla provides the perfect backdrop for crispy, golden-brown pieces of tripe; while tripe can sometimes taste gamey, the restaurant's preparation "distills the flavor to a pleasant saltiness and umami." A cabbage slaw and gently spicy salsa round out the flavors, and Roland adds that although there are a lot of great tacos in town, she doesn’t think this will ever be bumped out of her top few." - Eater Staff
