A ‘Top Chef’ Star Will Open Los Angeles’s First Fine Dining Caribbean Restaurant | Eater LA
"A new restaurant opening this spring on Fairfax Avenue slightly north of Beverly Boulevard is being developed by owner Sam Jordan (formerly of Olivetta and Issima), who has tapped Jamaican-Canadian chef and Top Chef Canada semi-finalist Adrian Forte from Toronto to create a modern Afro‑Caribbean menu. Forte’s CV includes roles as culinary director for Turks and Caicos’s Emara Estate, work as a private chef for celebrities including Alicia Keys and Drake, and authorship of the Yawd cookbook. He is finalizing the menu with modern takes on traditional rice and peas, plantains dusted with a homemade hibiscus seasoning blend and served alongside Nashville hot mayo, and a Trini macaroni pie topped with cheese foam, brown butter breadcrumbs, and chives." - Mona Holmes
