"Nova Brewing Co. is a small tasting room located in an industrial complex in Covina, producing some of the first sake in Los Angeles in over 70 years. Founders Emiko Tanabe and James Jin aim to brew sake that reflects California's drink culture. Despite challenges with the equipment and regulations, they adapted beer brewing equipment for sake production. Nova's sakes are made from California-grown Calrose rice, emphasizing local ingredients and distinct brewing methods.
