"Local chef and restaurateur Leticia Mitchell opened Leticia’s Cocina and Cantina at Boulder Station Hotel and Casino on August 27, her fourth restaurant and second partnership with Stations Casinos. The cantina was built to resemble a Mexican hacienda with large flowers painted on the homey white exterior wall and string lights dripping from the ceiling in a dining room that has the feel of a courtyard patio. Mitchell insists on only serving freshly made tortillas and relies heavily on family recipes. That means every dish — from the roasted poblano soup to the mole chilaquiles, and quesabirria tacos — feels intentional.
