"Debuting around Diwali 2020 inside Pilot Project Brewing in Logan Square, Azadi Brewery is brewing a Belgian quad made with dates at 10.5% ABV for its one-year anniversary with a flavor profile reminiscent of Indian sweets (a kind of “liquid mithai”); the brewery also makes Kadak, a stout built on a Modi family chai recipe, and Jaago, a chicory amber ale whose cans feature Jenny Vyas’s painting “LEATHE,” and its birthday beer will be released Nov. 13 at Pilot Project paired with a special menu from Wazwan and a planned tabla performance by Arpit Pathak." - Ashok Selvam
