A Vegan Fried ‘Chicken’ Cart Is Coming to Northeast Portland - Eater Portland
"The Mocking Bird offers a variety of vegan comfort foods, such as vegan-mac-and-cheese-topped faux-chicken sandwiches. The cart, started by Kayla Lamberson, is known for its innovative vegan versions of traditionally meat-and-dairy-heavy dishes. Lamberson's menu includes cashew cheese macaroni and cheese, cheese-less grilled cheese sandwiches, and fried faux chicken and waffles.
