"Inside the hotel, I see Ouibar and Kitchen, led by chef Drew Benyo; it will serve breakfast, lunch, and dinner plus two happy hours, offering playful items like waffles on a stick (why?) and wasabi grilled cheese sandwiches. Morning dining includes breakfast sandwiches on English muffins and cheddar biscuits and gravy; lunch leans into 'Flavortown' with tater tot poutine and fried cheese curds with Kewpie mayo. The breakfast waffle-on-a-stick is carried into dinner with extra fried chicken and jalapeño-maple whipped butter, alongside more reserved dishes such as sautéed salmon with celeriac puree and gambas al ajillo.
