Hanger steak comes out tougher than steakhouse standards with an ashy, bitter char, and the beef Wellington is notably small, the steak barely larger than a soup-spoonful. Better offerings include a steak sandwich that tucks tender strips of meat into tenacious focaccia with giardiniera, and roasted Brussels sprouts finished with a brown-butter–orange sauce.
