"Kevin Delk, an Atlanta transplant known for a trio of eccentric Denver concepts, has transformed a 6,000-square-foot former Mercury Cafe space at 1310 Pearl Street into a Calypso- and Caribbean-inspired all-day gathering spot. The warehouse-like main dining area will pair punchy cocktails and Caribbean-leaning plates with live music and rainforest bird sounds, while a Southern porch–feeling morning take-out window will usher guests into breakfast, lunch, dinner and late-night service. Delk — who seeks out underappreciated neighborhood buildings rather than merely preserving history — collaborated with Beatrice and Woodsley chef Travis Messervey to craft a Caribbean homage, and the venue is positioned to serve as a community hub at the intersection of 13th and Pearl Streets.
