"Inside downtown’s food hall the Square, I discovered a minimalist kombucha bar run by Tanya Maynigo, who pours chilled kombucha from color-coded taps by the glass or in reusable growlers — offering straight pulls and mixed glasses in flavors that range from sharp ginger and blue elderflowers to a sweeter, caffeine-free mango, plus pomegranate (which can recall a natural wine or a sparkling, funky rosé) and a citra-hop option aimed at beer fans. Maynigo, a former home brewer who has been developing innovative kombucha flavors since the early 2000s, grew the business from farmer’s-market growlers to D.C.’s first kombucha bar at Union Market, rebranded from Craft Kombucha to honor her late dog Guinness (the brand’s logo), and now mans the Square stall roughly 11 a.m.–3 p.m. Monday–Friday with expanded hours, retail bottles, and upcoming brewing classes. The operation includes fun collaborations — a Spanish-wine kombucha made with Casa Teresa and a Wednesday happy hour pairing fermented flights with sushi from Kiyomi Sushi — and has seen its pours served in wine glasses at Michelin-starred Fiola Mare and even been included in a Georgetown University study on kombucha’s health benefits.
