"This Evanston pizzeria was among the first in the Chicago metro area to specialize in Motor City pies. Inspired by the style’s birthplace, Buddy’s Pizza in Detroit, Union co-founder Vince DiBattista sought to introduce it to a new audience. The hallmarks are all evident on Union’s offerings: crisp edges, brick cheese, and tomato sauce ladled on top. Topping combinations include broccoli and potato, burrata margherita, and buffalo chicken and blue cheese, and gluten-free and vegan cheese are available upon request.
