"A favorite at farmers’ markets throughout San Diego — including the Little Italy Mercato and La Jolla Open Aire Market — Prager Brothers Artisan Breads got its start in Encinitas in 2012, when brothers Clinton and Louie Prager launched their bread-making business by borrowing Blue Ribbon Artisan Pizza’s wood-fired oven during off hours. I’ve seen the Carlsbad native establish a bakery and retail facility in the Carlsbad Gateway Center with indoor and outdoor seating that offers a wide selection of all-organic baked goods crafted with old-world traditions: naturally-fermented loaves made with fresh-milled rye and spelt flour, baguettes and pretzels, grab-and-go sandwiches, and a large range of viennoiserie including brioche, danishes, and croissants. They’re expanding their presence in North County with a 1,300-square-foot, takeaway-focused outpost on South Coast Highway in coastal Encinitas that will feature a large counter displaying over 50 products; baking won’t be done on site initially though ovens may be added later, and the shop was expected to open by January or February." - Candice Woo
