"Belgian waffles combined with American ingredients are headed to Spring Valley next month, when Lucy’s Waffles & Ice Cream replaces a shuttered frozen yogurt store at the Rainbow Pavilion retail center. Located at the northeast corner of Rainbow Boulevard and Patrick Lane, the shop will specialize in ice cream sandwiches made with warm waffles and promote “breakfast for dessert” combinations — think waffles topped with fruity pebbles, sprinkles, and Nutella. The space, which features easy-to-spot arched windows and sits next to Firehouse Subs and across the parking lot from Jaburritos, is set to launch on Aug. 11, though opening hours have yet to be announced." - Bradley Martin
