These deliciously unphotogenic sandwiches are served on rolls shipped in from famous Philadelphia bakery Amoroso’s, and these suckers are huge, weighing in around a pound and a half apiece. Peppers and onions are optional, and you can also order a mushroom-and-onion version, swap in chicken for steak, or even customize your cheesesteak as a hoagie, with mayo, lettuce, and tomatoes. A word to the uninitiated: Per East Coast tradition, the white American cheese melts completely into the ribeye, binding the meat together—it’s in there, and you’ll know it when you take a bite.
