"A second-generation family restaurant on Snelling, Mirror of Korea has one of the most extensive menus in town. For an easy way to navigate the wealth of choices, pick from the chef specials — a curated selection ranging from familiar classics like mandu, stuffed with vegetables and pan-fried to a burnished bronze on both sides; to more specialty items like gopchang-jeongol — tripe broiled until tender in a spicy broth and prepared tableside. In the summer, nothing is better than their bibim-naengmyun, buckwheat noodles tossed in vinegary pepper paste and served ice-cold with slivers of fresh and pickled vegetables." - Julie Yu
