"A ’70s-era New York–style malt shop built as the restaurant companion to a disco-themed Spiegelworld show, it pairs nostalgic diner visuals—classic records, decade-specific ephemera, orange-handled flatware—with unexpectedly elevated, playful cooking. The menu riffs on comfort classics and party-food excess: malted shakes served in the tin; a steakhouse-ground burger crusted in black pepper, layered with salty aioli and roasted cherries on a challah bun and meant to be dunked in a peppery au poivre gravy; a bright yellowtail tartare with yuzu and mustard; French-onion–style macaroni and cheese with gruyère and caramelized onions; deftly cooked steelhead trout with capers, lemon, and rice pilaf; eggy popovers offered with butter and jam or dressed up with foie gras and caviar; and “disco-style” fries topped with cheese, gravy, and caramelized onions. Cocktails range from classics like an electric orange wallbanger to a creamy Champagne colada and a canned Midori sour with basil and strawberries. Desserts lean nostalgic—confetti funnel cakes with ice cream, chocolate malt shakes, and rice pudding with fresh mango—and the spot’s name is a playful nod to Diana Ross and the company’s creator. Opens August 14; visiting the diner does not require show tickets." - Janna Karel
