"In Seattle, Roxanne Brooks — daughter of Truffles N Bacon owner Jacqueline Lim — has opened Barrel & Bacon in Interbay at 945 Elliott Avenue, taking over the former Champagne Diner space and keeping a lot of the Vegas concept's DNA. The restaurant shares some of the same dishes and a penchant for bacon jam, but it's a drinks-and-dinner spot rather than a breakfast-and-lunch operation: Brooks kept certain 'greatest hits' (the mac-and-cheese burger survives) while adding more 'little bites' meant for happy hour. The ube French toast from Truffles appears here as a dessert, and Brooks is most excited about an original katsu fried chicken and waffles that she says people are calling the best in Seattle. Barrel & Bacon is open 4 to 10 p.m. Thursdays through Mondays, and parking is available in a lot." - Harry Cheadle
