"A new pan-Latin concept from chef Richard Sandoval opening this fall inside the Fairmont Chicago, Millennium Park, the restaurant draws broadly on Central and South American cuisines (including Colombia, Mexico, Argentina, Brazil, Peru and Venezuela) with a pronounced meat focus and about 30% of the menu localized for Chicago. Signature plates will include a Nikkei-inspired angry scorpion roll (crab, cucumber, avocado, and spicy tuna topped with eel sauce), corn- and ají amarillo–filled empanadas finished with chimichurri, and lomo saltado — Peruvian-style beef tenderloin on creamy rice crowned with crispy potato and spicy rocoto aioli. The cocktail program leans on South and Central American ingredients with theatrical touches (the Mercado Margarita combines jalapeño-infused El Jimador Blanco tequila with a pink hibiscus-rosemary foam that melts into passion fruit), and the colorful interior features bold Latin American textiles, seating roughly 260 with two private rooms for about 14 and 50 guests." - Lisa Shames
