"Opened on March 11 next to the Bainbridge Island Ferry Terminal at 220 Olympic Drive SE, Makoto Kimoto’s newest venture focuses on poke bowls, jewel-box-like shokado bento boxes of fresh seafood, and Suntory Toki highballs. I learned the restaurant is run by Josh Trebe (formerly of Seattle Fish Guys), his wife Emy, and daughter Mika, with Josh slated to become a partner; Kimoto chose the space partly because its lack of a gas range forced a focus on uncooked dishes. The menu offers 12 types of poke served on bowls with rice, seaweed salad, imitation crab, tobiko, greens, and other garnishes — including octopus and scallop served with soy sauce (the scallop described with its flavorful, chewy guts), and ahi and salmon available with five sauces: soy sauce, truffle and yuzu aioli, spicy yuzu aioli, chili oil, and salted scallion and ginger. If you want variety, the shokado bento is a gorgeous three-by-three grid of eight pokes with a side in the middle. They also serve a Japanese curry with wagyu and kurobata pork and Pike Place Chowder’s famous clam chowder topped with the house Japanese chili oil (rayu). Drink-wise, the focus is the Japanese highball — Kimoto even bought a Suntory Toki highball machine to make them efficiently. The counter-service space seats about 10 inside and 10 outside, plus a few picnic tables, is open 11 a.m.–7 p.m. (closed Wednesdays), and will add servers and possibly different hours after a yet-to-be-announced grand opening." - Jade Yamazaki Stewart
