"Chef and owner Kalpana Waikar runs a small shop in Evanston with a curated selection of sandwiches full of South Asian flavors. Take the Bombay Sandwich, served on sourdough panini bread with masala potatoes, pickled red onion, tomato, cucumber, green pepper, and roasted beets. This is augmented by a Kashmiri chili aioli and cilantro-mint chutney. The sandwiches are vegetarian, and there’s also an Indian-style omelette sando with chaat masala.
