"Opening in late October above the existing Crustacean space in Beverly Hills, this intimate 3,000-square-foot restaurant is led by legendary chef Helene An, who was dubbed “the mother of fusion cuisine” by the Smithsonian and received its Pioneer Award in Culinary Arts. An will personally helm the kitchen for one year before handing operations to current Crustacean chef Tony Nguyen, and the tasting menu will highlight An’s classic dishes inspired by her upbringing in Da Lat, Southern Vietnam. A family-run venture, the restaurant’s front-of-house is managed by An’s granddaughter, Bosilika An. Seating is limited to 40 guests with an eight-seat chef’s counter and a private dining room for 18; service runs Wednesday through Saturday with a single 7 p.m. seating on Wednesday and Thursday and two seatings (6 p.m. and 9 p.m.) on Friday and Saturday." - Mona Holmes
