"I learned that the St. Paul–based food truck Soul Lao, known for its pork belly baguette sandwiches, red curry–topped branzino, and fiery khao poon, is opening a permanent location at Sibley Plaza. Owners Sabrina Boualaphanh and Eric Phothisanh created a menu that includes khao gee pâté (a Lao sausage baguette sandwich), papaya salad, the super-popular crispy pork belly and wings, and a beer collaboration with next-door Wandering Leaf Brewery; they sold the food truck to focus on dialing in the new restaurant. A grand opening is planned for September 10, and this winter the spot will add a noodle soup menu featuring khao poon and khao soi." - Justine Jones
