"Opening across from the North Park water tower on El Cajon Boulevard, El Tianguis Rolled Taquitos is the creation of Oscar Ancira, whose family founded the Delimex line of Mexican frozen foods, and will focus on the rolled taquito — a popular late‑night (or anytime) snack. The taquitos will use fresh corn tortillas made in‑house in a special automated oven sourced from Mexico and displayed in an open kitchen, with fillings ranging from classic shredded beef and chicken to vegetarian and vegan options. Fried in small batches throughout the day, the rolled tacos will be topped with sour cream, a blend of cheeses, and lettuce, with hot sauce and guacamole offered on the side, and served in sets of three, five, eight, or 12 (larger quantities available for catering).
