"Shaking up the scene when it opened July 1 at 1245 H Street NE, the all-you-can-eat concept from chef Tim Ma delivers bottomless nigiri, rolls, and sashimi that emphasize freshness and flair. Priced at $55 for the standard 90-minute experience and $75 for the premium (with a 90-minute limit, charges for uneaten food, and height-based children’s discounts — under three feet 75% off, under four feet 50% off), the menu stretches from yellowtail and salmon nigiri to six-piece classics like spicy shrimp and tuna rolls. Specialty rolls range from a vegetable-friendly garden roll with grilled asparagus, shiitake, avocado, caramelized onion, and chili garden crunch to “She’s on Fire!” (spicy scallop, spicy shrimp, cucumber, crunchy flakes, and jalapeño) and the attention-grabbing “In‑N‑Out” roll with shabu beef, shredded lettuce, cheddar cheese, caramelized onion, tempura crumbs, and Thousand Island dressing. There are also plenty of non-sushi options — chicken and egg rice, creamy wasabi udon with shrimp tempura, miso black cod — and starters like a crispy rice trio (spicy tuna, spicy shrimp, kani salad), eggplant tempura, and gyoza, plus a reasonable à la carte direction that mirrors the AYCE selections. Ma says the beverage program will be intentionally simple to let the cuisine shine, featuring themed cocktails with Japanese spirits, a full liquor license, and select beers (ACYD) at $19. H Street was an obvious location choice for Ma, who converted the four-story former Bronze venue with Afro-futuristic decor, added a central sushi counter for entertainment and opened a rarely used third-floor patio for al fresco dining; the concept itself grew from a family night where Ma watched his children devour roll after roll and wanted to capture that experience affordably." - Vinciane Ngomsi
