In other words, it wants to “challenge your perception of the subcontinent,” as the restaurant puts it. Sample the Mumbai-style shrimp koliwada, battered and fried tiger shrimp served with tomato sauce, curry leaves, pickled radish, and flowers, and don’t miss the Jaipuri laal maas, a rich, red curry with sweet chili paste and tender cuts of slow-cooked lamb bathing in the bowl.
