"My passion for silogs — garlic rice topped with sunny-side up eggs — grew from a hobby into a farmer’s market booth and residency to the current Filipino food stall I co-own with Ken Tran at downtown Portland’s Moxy Hotel called Sun Rice. Despite the small working space and being tucked inside a hotel lobby, I’m happy with the low-risk setup because I can keep things tight, dial everything in, and focus on consistent quality so people keep coming back. Being inside the hotel gives us useful amenities like accessible bathrooms, dishwashers, and a prep room, and the limited service model frees me to perfect my rice and richly flavored proteins like chicken adobo and barbecue pork belly while also letting me participate in things like Kolectivo and the Sobrang Sarap events." - Thom Hilton
