"Taking over a 1,190-square-foot space at the Whole Foods Marketplace near the intersection of Lake Mead Boulevard and Tenaya Way, this 100% vegan, plant-based Asian-fusion fast-food concept from a Colorado chef previews a menu of sushi, vegan entrees, press juices, and smoothies. Drawing on the chef’s background in ramen, rice bowls, stir-fry noodles, and Japanese small plates, the offerings include miso soup, stuffed jalapeño, and tempura-fired king oyster mushrooms used as a calamari substitute; sushi choices such as pickled-vegetable, spicy-tofu, and avocado rolls, roasted yellow-bell-pepper nigiri, and carrot-juice-and-algae “roe” pockets; and entrees like tempura-fried gluten chunks prepared as sesame chicken and a tonkatsu-style dish made with panko-fried tofu skin.
