"Zen Sushi was the first sushi spot in Bishop Arts and is now one of its long-standing fixtures. Chef Michelle Carpenter, one of the originators of fusion sushi, marries local style with rolls and sushi plates. For Carpenter, the focus is on her Texan and Cajun heritage, with plays on South Asian dishes that integrate sushi. For example, Mussels Dynamite combines mussels, jalapeño, and crab. There’s Cajun edamame, Panko-crusted Japanese eggplant, the chipotle roll (super white tempura, chipotle, and cream cheese), and her signature Fox Ears (inari stuffed with tempura fried eel and shiso).
