"I note that a surprise off-Strip expansion of White Castle is already hiring for a 24-hour, fast-casual restaurant headed into a corner building across from the Hard Rock Hotel and Hofbrauhaus Las Vegas. The future home of “steam-grilled-on-a-bed-of-onions sliders” will replace the shuttered Checkers outpost at the intersection of Paradise Road and Harmon Avenue; the revamped location will feature a drive-thru and a hard-to-miss illuminated revolving sign on the roof and has been remodeled inside with an estimated construction budget of $68,000, a low number that hints at a speedy makeover for the 2,670-square-foot, counter-service space. White Castle arrived on the Strip in 2015, expanded downtown in 2017, and last year moved inside the Terrible’s Road House travel center in Jean, Nevada." - Bradley Martin
