"Located in the Kimpton Hotel Monaco, I found Panzano to be a casual, sustainably focused Northern Italian restaurant that serves breakfast, brunch, lunch, and dinner daily. With new chef Logan Stephenson — a Louisiana native whose 16 years in kitchens took him from eating fish and game his grandfather caught to culinary school at Scottsdale’s Le Cordon Bleu and stints at Michael White’s Fiamma, Circa 1900, James Beard semifinalist Noca, the Del Fina group in San Francisco (where he helped open several Italian restaurants), Blue Hound Kitchen, and as executive chef at SaltRock in Sedona — the restaurant plans to maintain its Northern Italian focus while adding whole-animal roasting and cooking classes tied to his love of cycling. Already, new dishes include grano arso pasta, which gives an earthy, toasty flavor to the pasta, gamberi alla busara (prawns in tomato sauce) for dinner, and a breakfast pizza.
