"Founded by chef Yazeed “Yaz” Soudani as a backyard pop-up in June 2023, its name translates to "100-percent" in Arabic and is used as slang for "perfect" or "great." A Smorgasburg favorite, Soudani—raised in Los Angeles but trained in Amman, Jordan—perfected his shawarma there. The pop-up’s signature chicken shawarma gets dressed with spices imported from Jordan, wrapped in fresh saj bread, and finished with garlic sauce or served over beef tallow-fried french fries; ordering shawarma "the Yaz way" adds a spicy garlic sauce and pomegranate molasses. The first permanent location, slated for 2026, will feature a 25-foot shawarma bar where guests can watch Soudani prepare the wraps from an outdoor patio.
